Aloha to those reading my blog! Today I have a recipe for this simple, summer salad that is perfect for picnics, Christmas lunch, just to whip up when you’re feeling lazy or even if you’re doing a fully raw day (minus the quinoa). It features loads of greens and other wholesome ingredients which is excellent to cleanse and refresh your body after a big weekend full of delicious foods or if you feel like something lighter to munch on!
You will need:
– 1 head of curly lettuce
– 1 zucchini
– 1 tin of lentils
– 1 cob of corn
– 1/2 cup of rinsed quinoa
– 1 avocado
– squeeze of lemon juice
– salt & pepper to taste
Firstly, you need to boil some water to cook your quinoa. Ensure to RINSE you quinoa before cooking it to remove the outer coating other wise it may taste bitter. Once rinsed, add to the boiling water and allow 15 minutes for it to cook.
Whilst the quinoa is cooking, chop up the lettuce into small bits, rinse and place in a large bowl. For the zucchini, i made it into zoodles (zucchini noodles) by using this nifty tool we got for $5 at Kmart. A great investment! If you don’t have a ‘zoodler’, just grate or peel the zucchini. Chop up the corn and add to the salad. Empty you lentils & make sure you rinse them as the may make you gassy if you don’t! Mash up the avo and add the lemon juice, salt and pepper (optional), add to the salad.
Once the quinoa is cooked, drain and rinse it, then add to the salad and happy days! To make this salad 100x better, make sure you mix the salad up to ensure the avocado ressing smothers everything.
