Yes you read the title correctly. Today’s recipe is for some super delicious chocolate chip, vegan cookies! Now in no way can I say that these are healthy snack, but every one needs a treat every once in a while yeah?
This recipe makes about 12 large cookies, perfect to take to a picnic, share with friends on a movie night or you know, you just have them to yourself 😉
So, read along and you shall find this recipe to the gooey cookies filled with chocolate.
You will need:
– 1 cup of vegan spread (I used nuttelex)
-2 cups of caster sugar
– 2 tablespoons of apple sauce
-2 cups of self-raising flour
-2 blocks or vegan chocolate (I used Sweet Williams dairy milk chocolate)
First you need to pre-heat your oven to 200 degrees Celsius.
Next you need to cream together you vegan spread & caster sugar until it is pale in colour.
Once the mixture is light and fluffy, add your apple sauce and mix well.
Now sift your dry ingredients into the mixture and ensure they’re well combined.
Break up your chocolate and add to the mixture.
Once all combined, line a baking tray with baking paper and grab about a tablespoon or two of the mixture. Now slightly flatten out and shape into a circle.
Place in the oven to cook for about 10 – 15 minutes, or until nicely browned.
*Tip: If you love slightly chewy cookies, take them out when they just starting to turn golden and leave them to cool*
Once they’re cooked, leave them to cool and then enjoy!
